JUICER! BEETS! Done and Done!

Roomy got a new juicer for her birthday - the Jack LaLanne Juicer!!!! (http://www.powerjuicer.com/)

I may be in love.  Seriously.

Annnnnnnd - I FINALLY used at least *a* beet in my first juicing experience!  WOOHOO!!  (Remember, a few posts ago, the 100 Foods?  Yeah.  Beets and Avocados - the index cards are still hanging on the fridge and the beets have been in the drawer for a couple weeks. . .oops.) 

My first recipe: 1 apple, a beet, and 2 carrots.  I ended up with the red, slightly tangy, slighty dirt-tasty (beet) approximately 6-8 oz of juice and probably about 1 cup of pulp.  The dogs each had a sample of the pulp and enjoyed that treat!  I saved the rest of the pulp - haven't decided how I will use that, yet.  Could add it to salads or stirfry, of course . . . thinking that if I make some granola/energy bars or healthy cake bars with the pulp. . . Ahhhh!!! I'M SO EXCITED!!!!

P.S. I think that the Co-Op Deli that I work at could benefit from using a juicer.  We could sell fresh fruit+veggie juices and then use the pulp in the baking.  GENIUS.  Healthy, resourceful, organic.  YESSSSS.

Let's DO IT.



***Note: Juicing is fantastic way to 'hide' less lovely fruits and veggies in yumminess.  However, the fiber that comes along with whole foods needs also be consumed, as there are TONS of vitamins, minerals, and lots of FIBER in the pulp that resides in the juicer after juice extraction.  Eat up! :-)

  1. Ew! I hate beets, but good for you! I use my blender to make smoothies that have bananas in them. I cannot eat a banana by itself, but add a couple more fruits, some juice, and some yogurt and it is YUMMY!
